Gluten Free Brown Sugar Maple Glazed Scones

Oh yummy scone deliciousness!

The inspiration for this recipe came from one of my new favorite blogs, "Vegan Visitor."  I found Dayna's blog while searching for "Vegan Scone Recipe."  I was in the mood for making something sweet and tasty, and perfect for breakfast and thought scones would do the trick.

So, I decided to play on her vegan "Brown Sugar Scones" recipe and make my very own Gluten Free version.

And, they were a hit!  So much so, that almost none were left for breakfast the next morning!

These are perfect with Dayna's Maple Glaze, which I whipped up in under 2 minutes.

Try these next time you want something nice and yummy for breakfast!


Gluten Free Brown Sugar Maple Glazed Scones
Makes 8 yummy scones

Gluten Free ● Egg FreeDairy Free ● Soy FreeCasein Free


2 3/4 cup Wholesome Chow's Gluten Free All-Purpose Baking Mix
1/4 cup Dark Brown Sugar, loosely packed + 1 tbsp (for topping)
1/2 cup Cold Organic Vegetable Shortening (such as Spectrum), or Cold Coconut Oil or Vegan Butter
3/4 cup Almond or Soy Milk
1/2 tsp Apple Cider Vinegar 
Brown Sugar Maple Glazed Scones
1/2 cup Maple Syrup

1 recipe Maple Glaze

Directions:
  1. Preheat oven to 375 degrees and line a baking sheet with parchment or a Silpat
  2. In a large mixing bowl, add All-Purpose Baking Mix and 1/4 cup brown sugar.
  3. Using a pastry cutter or two forks, cut the shortening into the flour until crumbly and well incorporated (Here's a great video on how to do this!)
  4. Add the milk, apple cider vinegar and maple syrup, using a wooden spoon mix until well incorporated and mixture has turned into a ball of dough.  Add more flour by the tablespoon if your dough is too sticky.
  5. Turn dough onto prepared baking sheet and form into a round disc approximately 3/4 inch thick.
  6. Cut the dough into 8 wedges (its ok if they still stick together, you can cut them apart after baking) and sprinkle with remaining brown sugar.
  7. Bake for 22-26 minutes, or until dough is firm.
  8. Meanwhile, make your Maple Glaze.  Visit the Vegan Visitor blog for directions on how to make this yummy glaze.
  9. Once scones have baked, pull from oven and let cool for 15 minutes.
  10. Cut apart into 8 pieces and drizzle with prepared Maple Glaze.
  11. Enjoy with your morning coffee or as a sweet treat in the afternoon sun.
